Pineapple Shrimp Tacos with Avocado

Simple baked tacos with tangy pineapple, creamy sauce and fresh avocado.
Ingredients You'll Need
8 oz Frozen Shrimp
1 package Taco Seasoning
1 can Black Beans
6 Flour Tortillas
½ Onion
1 Avocado
1 Jalapeño (optional)
2 Tbsp Cilantro
1 can Pineapple
½ cup Sour Cream
1 Lime
Olive Oil, Salt & Pepper

Gather all ingredients and wash fruits and vegetables. For this recipe you will need a large baking sheet. Preheat oven to 425 degrees.

Finely chop onion, cilantro, and jalapeno. For less spice, remove seeds from the jalapeno before chopping.

Grab large baking tray (for easier cleanup cover in aluminum foil). Add pineapple, jalapeno, onion, shrimp, black beans and taco seasoning to tray. Bake at 425 for 16 minutes or until shrimp is fully cooked.

While taco filling cooks, In a small bowl, combine sour cream, squeeze in lime juice, and add a pinch of black pepper. Stir until smooth.

Remove baking tray from oven, stir to combine and top with fresh cilantro.

Heat tortillas on a baking tray in oven for 2 minutes or until softened.

Remove avocado pit and skin, then slice into thin strips.

Assemble tacos, start with a tortilla, add pineapple shrimp filling, thin avocado slices, and drizzle with lime sour cream sauce.
