Cheesy BBQ Baked Potatoes

Tender baked potatoes ready in 30 minutes, with tangy BBQ sauce, fresh green onion, and a cheesy parmesan blend.


Ingredients You'll Need

  • 2-3 Large Russet Potatoes

  • 8 oz Ground Pork

  • 1/2 cup BBQ Sauce

  • 3 stems Green Onion

  • 1 cup Parmesan Cheese

  • 4 tbsp Butter

  • 3 tbsp Half & Half

  • Olive Oil, Salt & Pepper

  1. Gather all ingredients and wash fruits and vegetables. For this recipe you will need a large skillet, large bowl and a baking tray.

  1. Pierce potatoes multiple times with a fork and microwave for 6-7 minutes on high, or until a knife or fork can pierce easily.

  1. Scoop the middle out of potatoes, and set aside in a large bowl. Then chop 2 stems of green onion.

  1. Add the potato, chopped green onion, butter and cream, mash and stir to combine until smooth and season with salt and pepper.

  1. Using a spoon, scoop the potato mixture back into the skin, until full.

  1. Heat skillet over medium high heat, add olive oil and ground pork to hot pan. Sear until the pork is cooked through. Add barbeque and stir to combine.

  1. Add BBQ pork to the top of the filled potatoes.

  1. Sprinkle with parmesan cheese and bake at 425 degrees until cheese is melted and potato skin is crisped.

  1. Plate with fresh chopped green onion and enjoy.
