Deconstructed Enchilada Skillet A Quick and Comforting One Pan Delight

All the bold, comforting flavors of traditional enchiladas come together in this quick, cheesy, and satisfying one-skillet meal.
Ingredients You'll Need
½ lb Ground Beef
1 can Enchilada Sauce
1 can Black Beans
6 Flour Tortillas
½ Onion
1 Bell Pepper
1 Jalapeño (optional)
2 Tbsp Cilantro
1 cup Mexican Cheese
½ cup Sour Cream
1 Lime
Olive Oil, Salt & Pepper

Gather all ingredients and wash fruits and vegetables. For this recipe you will need a large skillet.

Finely chop onion, bell pepper, cilantro, and jalapeno. For less spice, remove seeds before chopping.

Place skillet over medium heat, add a drizzle of oil, and saute onion, bell pepper, and jalapeno until softened, 5 minutes.

Add ground beef with a pinch of salt and pepper to the hot skillet. Cook with vegetables until fully browned, 6–10 minutes.

Open cans of black beans and enchilada sauce, pour into skillet, cover, and reduce heat to low to simmer.

While skillet simmers, chop tortillas into bite-sized pieces so they are ready to add to the skillet.

Remove lid, add tortilla pieces and shredded cheese to skillet. Stir gently to combine, then replace lid to melt the cheese.

In a small bowl, combine sour cream, squeeze in lime juice, and add a pinch of black pepper. Stir until smooth.

9. Turn off heat, remove lid from skillet, stir, then drizzle sour cream mixture and sprinkle chopped cilantro on top.

Serve warm in bowls and enjoy immediately.
